Orange Ginger Chicken Rotini


This is such an easy entree, it can be made when camping out. 

1  cup  chopped orange sections
1/2  cup  orange juice
1/4  cup  chopped green onions
1/4  cup  low-sodium soy sauce
3  tablespoons  fresh lemon juice
2  tablespoons  olive oil
1  tablespoon  honey
2  teaspoons  grated peeled fresh ginger
1  teaspoon  ground coriander seeds
1 1/2  pounds  chicken breast tenders
8  cups  cooked rotini (about 1 pound uncooked corkscrew pasta)

Combine first 9 ingredients in a large heavy-duty zip-top plastic bag. Place chicken in sealed plastic bag with marinate for about 3 hours. Add the chicken mixture to a skillet, and cook 15 minutes. Add cooked pasta, and simmer 5 minutes or until the chicken is done and the pasta is thoroughly heated. Serves 6.
