Toffee


I usually make this at Christmas, but if you need a special treat for Valentine's Day it would be great for that too.

3 c sugar
3 T light Karo
1 lb Parkay margarine
2 ½ c finely chopped pecans
24 oz Hershey Bars

Cook all ingredients, except chocolate in a deep pot until it reaches 300 degrees on a candy thermometer or higher until it becomes a deep caramel color. Be sure to stir constantly during this time. Spray 3 cookie sheets with Pam. Spread cooked mixture onto sheets until thin. Melt Hershey bars in double boiler or in the microwave. Spread chocolate on one side of candy first. Cool in refrigerator. Then turn over and repeat on second side. Break into pieces when chocolate has hardened.
