Feta Cole Slaw

Small head of cabbage thinly sliced
1 (6 ounce) package crumbled feta cheese
6 -7 green onions, chopped
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
Salt 
Pepper
1 -2 teaspoon sugar 

Combine shredded cabbage, feta and chopped green onions in a large bowl. In a separate bowl whisk together vinegar, salt, pepper, sugar, and oil. Pour over the slaw and toss. Refrigerate for several hours until ready to serve. May be made the day before.

Rolf makes a slaw similar to this - but with gorgonzola - yum!
