Pumpkin Cranberry Bread


Pumpkin Cranberry Bread
2 eggs, slightly beaten
2 c sugar
½ c oil
1 c solidly packed pumpkin
2 ¼ c plus 2 T flour
1 T pumpkin pie spice
1 t baking soda
½  t salt
1 c chopped cranberries

In a large bowl, combine flour, pie spice, soda and salt. Make a well in the center. Pour pumpkin mixture into the well. Mix just until moistened. Stir in cranberries. Spoon batter into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour or until toothpick comes out clean.
