Anna's Baked Oatmeal
Anna Fink shared this recipe when she stayed at our house while on a ski vacation. It is easy and can be made ahead for a breakfast treat.
3 c old fashioned oats
1 c brown sugar
2 t cinnamon
2 t baking powder
1 t salt
1 c milk
2 eggs
1 stick melted butter (I used less)
2 t vanilla
3/4 c craisins, raisins or any type of dried fruit mixture
Mix all ingredients then pour into greased 9x9 baking dish. Refrigerate overnight. Bake at 350 degrees for 40 minutes. Leftovers are delicious heated in the microwave.
