Green Chiles and Egg Casserole

10 eggs 1 pint cottage cheese 1/2 cup melted butter 1/2 cup unsifted flour 1 pound shredded Sonoma Jack or Monterrey Jack cheese 1 teaspoon baking powder 1/2 teaspoon salt 2 cans (4 ounce size) diced green chiles Preheat oven to 350 degrees F. Beat eggs and add remaining ingredients. Bake in buttered 2-9" dishes or 1-9x13" baking dish. Bake for 35 minutes or until eggs are firm and inserted knife comes out clean. This dish can be made ahead of time, refrigerated and baked just before serving. It is also good if you leave out the green chiles and add spinach and mushrooms or ham with Italian spice. You can also make it gluten-free by using gluten-free flour. www.hearthope.org

Breakfast Casserole

6 slices of bread made into crumbs--I make them in the food processor 1 lb hot sausage 8 oz of cheddar cheese 5 eggs 3/4 c milk 1/4 t salt 1/8 t pepper 1/2 t mustard Spray 9x13 inch casserole with nonstick spray. Put bread crumbs in bottom of baking dish. Layer cooked meat on top of crumbs. Sprinkle cheese evenly on top of sausage. Mix eggs, milk, salt, pepper and mustard well before pouring over layered ingredients. Refrigerate overnight. Bake at 350 degrees for 30-45 minutes until browned and set. www.hearthope.org

Ham and Hash Brown Brunch Casserole

1 lb ground ham 16 oz hashed browns Chopped green onions to taste 1 c cheese (you can use any kind and can even mix Mexican cheese and Mozzarella or whatever you have) 4 large eggs ½ c milk 1 t salt ½ t pepper Spray a 9x13” pan with cooking spray. Cook hashed browns according to package directions (I use the cooking spray method). Sprinkle hashed browns into cooking dish. Sprinkle ham on top of hashed browns. Put chopped onions and cheese on top of ham. Mix eggs, milk, salt and pepper well, then pour on top of mixture. Refrigerate over night. Bake at 350 degrees for 25-35 minutes or until set. www.hearthope.org

Ham Cheese Rolls

My daughter Lynn makes these for Sunday morning treats and they are always a hit! 4 Packages-King’s Hawaiian Dinner Rolls (12 per pkg, work well because they come in a cook able/disposable container) 2 lbs-Sliced deli ham (the prepackaged sliced and stacked is easy to dice) 1 lb-Swiss cheese 1 Cup-Butter or margarine (2 Sticks) ¼ Cup-Yellow mustard (add more to taste) 2-3 Tbsp-Poppy Seeds Set butter aside until room temperature or quickly soften butter in microwave for a few seconds. Combine butter, mustard and poppy seeds into a thick paste, set aside. Dice ham and cheese, mix in bowl. Remove rolls from  cardboard containers and save for microwave or oven cooking later. Slice all packages and 12 rolls at one time, leaving the tops and bottoms intact,  place the bottom half of rolls back in the cardboard to assemble.  Spread butter mixture on the inside top halves, evenly distribute ham and cheese on bottom halves.
